Taste the “Now” of Tokyo Tokyo’s Edo vegetables, fresh fish caught at local fishing grounds, and ingredients from livestock raised locally in Tokyo.
Encounters with incredible ingredient producers and rediscovering rich ingredients.
At the CHEF'S TABLE at TRUNK (KITCHEN), the chef interacts with local producers and offers dishes that express the “now” of Tokyo, based on the carefully selected ingredients.
The special counter seating located next to the kitchen – it is as if you were right inside of the kitchen itself. The chef’s challenge is to bring out the charm and very best of Tokyo that hasn’t been seen before. Enjoy this original course menu, available for a limited-time only.

MASANORI ISONUMA

Graduate of Tokyo University of Agriculture. Studied dairy farming in Australia.
Established a ranch in Hachioji, Tokyo 29 years ago.
Isonuma Milk Farm incorporates the idea of animal welfare at their ranch and respects the dignity and autonomy of their dairy cows, while they aim to also give back to their surrounding community.
Dairy products made at the “world’s smallest yogurt studio” have been recognized for their rich flavor and high nutritional value.

KOSUKE UENO

After graduating with a specialty in Zymology from the University of Yamanashi Faculty of Engineering, Ueno spent 17 and a half years in Shiga Prefecture and five months in Niigata Prefecture brewing wine.
With a production capacity of 20,000 bottles, Fukagawa Winery in Fukagawa, Tokyo, is crafting a new type of wine to act as a catalyst in communications with the surrounding communities.

TOSHIO TANAKA

Tanaka quit a company job and became independent at the age of 40,he then began cultivating spinach including Komatsuna mustard spinach, and also established a poultry farm. His farm now houses 3,000 chickens in Tachikawa, Tokyo.
Tanaka is more concerned about having his eggs reach a more diverse crowd than he is about any profit he’ll make. His eggs, which are produced from nutritious feed from transparent sources, have also earned him the trust of long-established Japanese confectionary shops.

MASASHI OKAMOTO

Like a kaleidoscope, orchestrating the myriad of charms of dishes, a chef at the forefront of the next generation of global cuisine. Born in Hiroshima Prefecture in 1981.
After studying at Osaka’s culinary school, he finetuned his skills at Italian restaurants in Osaka and Hiroshima Prefectures.
It was at that time that he encountered French cooking, and was attracted by its careful and precise cooking techniques, which led him to hone his skills at a famous French restaurant in Hiroshima.
Based on his outstanding skills, he served as the executive chef at wedding halls nationwide, and familiarized himself with cuisines of various genres.
Chef Okamoto took helm as the executive chef of 【TRUNK (KITCHEN)】 in the spring of 2017, and offers brand new, fresh dishes with surprising charm centered around a New American-style.
